When the trend is down I want to place a buy order above the current price in anticipation the price will rise. However when right clicking on the chart only Sell orders are placeable. How can I place an order above the current price when the trend is down? Same question in reverse.

Placing a buy order above current price can be done using a Buy Stop Market order which is visible in the screenshot you posted. This means when price touched your stop price, the order becomes a market order and is executed. A stop market order doesn’t guarantee that you get filled at that exact price.
Likewise, a sell order below current price would be a Sell Stop Market order.
